Loaded Potato Croquettes

This is easily what I would consider my signature dish if I had one, seeing as they're both super easy to make and super customizable to your own tastes. Mashed potatoes (I usually use instant), mixed with whatever cheeses, fillings or other accoutrements you want in them, breaded and either deep-fried or baked.

Bacon-Wrapped Stuffed Chicken

Far from fine dining, but a crowd-pleaser nonetheless. This recipe is made primarily by wrapping ingredients around other ingredients — cream cheese (seasoned to your liking), wrapped in a thin-cut chicken breast (also seasoned to your liking), wrapped in bacon and cooked in a chicken soup-esque sauce for about an hour.

Two-Minute Chili

Unfortunately this one may be a bit harder to accomplish without the right equipment, as my go-to method requires a flat-top grill (or a griddle, if you have one of those lying around). Ground beef, diced onions, salsa and taco seasoning are the only ingredients required to make this surprisingly flavorful dish.
